Now in 2023, Tall Guy and a Grill has grown into The Brazen Standard Hospitality Group, including five hospitality-centric businesses. Meet Dan
When he first started in the catering industry in 2009, Dan wanted to prove to himself that it’s possible to build a brand that made a positive impact. Over a decade later, Tall Guy and a Grill has expanded into a growing family of hospitality brands, intent on making Wisconsin a renown destination for leading culinary talent, warm hospitality and unforgettably good food.
After years of growing popularity and multiple awards, the close collaboration between Dan and Tall Guy’s Executive Chef, Dana Spandet, ignited into an incredible partnership with the roaring success of Flour Girl & Flame. As the opportunities expanded with the launch of The Crafted Tavern shortly after, Dan and Dana realized they could accomplish more together.
Brazen Standard Hospitality allows Dan and Dana to build a family of brands that work together to continue the mission for a more sustainable, local-supporting industry.
Dan was introduced to Gregory through other business owners, and as mentioned in this video, it was eGuide's (particularly Gregory's) comprehension of the wedding market within the catering industry that piqued Dan's interest in forming a partnership. With a deep understanding of the sales and operations involved in off-premise catering, eGuide was able to swiftly evaluate and assist in Tall Guy and a Grill's ongoing expansion, leading to the creation of The Brazen Standard Hospitality Group.

Growing into Brazen Standard
From operating as a single enterprise, Tall Guy and a Grill, in 2020, the Brazen Standard Hospitality Group has grown to encompass restaurant, mobile concepts, and venue exclusivity, thanks to the close collaboration between Brazen Hospitality and eGuide. By providing a combination of coaching and operations support, eGuide has enabled the Brazen Standard management team to concentrate on prioritizing projects to increase efficiency as the new business lines expand.
Paraphrasing Dan, it’s a challenge to grow and manage a rapidly growing business, but it's made easier by having someone objective and efficiency driven available to support the journey.
As a rapidly expanding entity, Brazen Standard's support needs have varied since our partnership began at the end of 2020. Thanks to eGuide's unique ability to provide support with technology, digital marketing, and business coaching, we have been able to assist in critical growth moments for the organization and make transition points smoother. As Brazen Standard adds more business lines and diversifies the structure of the hospitality group, eGuide is ready to provide support in exploring uncharted territory.
